I celebrated my birthday on February 19th at Le Belvédère .   Birthday celebration at Le Belvédère was super!!! A memorable evening indeed!   The joy of experiencing another year never fades! I am just happy and grateful for health and strength. I thank the lord for another year of my life because so many people that I know have passed away.       The most delicious banana fritters with strawberry topping | Caribbean Cuisine | Saint Lucia.   I had a couple of over-ripe bananas that had developed black spots on the skin. I don’t like to eat the over ripe bananas, I usually turn them into smoothies, milkshakes or prepare delicious fritters! The riper your banana is the sweeter your fritters will be.   Don’t overcrowd the pan and fry too many at once. It will drop the temperature of the oil. I usually do 4-5 at a time.  Really quick & easy recipe! Serve with a drizzle of syrup or honey, a blob of ice cream, strawberry toppings and more.
