The most delicious banana fritters with strawberry topping | Caribbean Cuisine | Saint Lucia.

  I had a couple of over-ripe bananas that had developed black spots on the skin. I don’t like to eat the over ripe bananas, I usually turn them into smoothies, milkshakes or prepare delicious fritters! The riper your banana is the sweeter your fritters will be. 

 Don’t overcrowd the pan and fry too many at once. It will drop the temperature of the oil. I usually do 4-5 at a time. 

Really quick & easy recipe! Serve with a drizzle of syrup or honey, a blob of ice cream, strawberry toppings and more. Really, the possibilities are endless, so do play around with how you wish to serve and have fun eating them! 

 


 

 

 Ingredients: 

2-3 ripe bananas, mashed 

2 tablespoons brown sugar 

1 egg beaten

 1/2 cup milk 

1 tablespoon melted butter 

1 cup all purpose flour 

1 teaspoon baking powder

 1/8 teaspoon nutmeg 

1/4 teaspoon cinnamon 

pinch of salt 

Vegetable oil for shallow frying 

 

 Preparation: 

In a medium sized bowl add the mashed bananas, brown sugar, beaten egg, milk and melted butter and mix until combined well. 

In a separate bowl, whisk together the flour, baking powder, nutmeg, cinnamon and salt. 

Add the banana mixture stirring until smooth. Let the batter rest for 5- 10 minutes. 

Heat a small amount of oil in a skillet/pan over medium heat. 

Place a spoonful of the batter into the hot oil and fry 2-3 minutes until golden brown and cooked through the middle.. Do not overcrowd the pan, It will drop the temperature of the oil. I usually do 4-5 at a time. 

Flip the fritters, fry until golden brown. Remove fritters from oil and place on a tray lined with paper towels. 

You can sprinkle powdered sugar on top or any topping of your choice. I made a delicious strawberry sauce for topping. See below for recipe. Homemade strawberry topping! 

Strawberry Sauce Ingredients: 

1 lb Strawberries, rinsed, hulled and thickly sliced 

1/3 cup granulated sugar 

1 Tbsp lemon juice (from 1/2 Lemon) 

 How to Prepare this Delicious Strawberry Sauce: 

1. In a medium saucepan, combine sliced strawberries, 1/3 cup sugar and 1 Tablespoon fresh lemon juice. 

Place over medium heat and bring the mixture to a boil, stirring occasionally. The strawberries will release juice without any mashing required. 

2. Reduce heat and simmer 20-23 minutes or until sauce is thickened, stirring occasionally. 

Remove from heat and cool to room temperature. Keep in mind sauce will thicken up slightly as it cools and even more after refrigeration. 

Voila! It's done! 

 


 

 This strawberry sauce goes well over ice cream, pancakes, waffles, pie, cheesecake, banana fritters and more!
