Simple Caribbean Inspired Dumplings Recipe.๐Ÿ’œ

Ingredients:

1 cup all-purpose flour

1/2 teaspoon salt

1/4 cup water, add more if needed.

Instructions:

1. Mix flour and salt in a bowl.

2. Once it’s all mixed in then use your fingers to knead it into a dough; add a little more water if the mixture is too dry. Knead until a stiff dough is formed. Note: Adding small amounts of water is key so the dough doesn’t get too sticky.

3. Pinch off about 1/2 ounce of dough and roll it between the palms of your hands to form small balls or spinners (tapered cylindrical shape) Or you can cut into small pieces like I did in video.

4. Roll into balls or tubes. Add the small dough balls into the pot and cook for a further 10 minutes or add to your soup or one pot meal.

Serve and enjoy!๐Ÿ˜‹๐Ÿ’œ

Baked Chicken

Baked Chicken | Simple Meal Ideas | Cooking Tips       No recipe today, however this is today's cooking tips and a simple meal idea:   Baking Chicken tips:   Rinse the chicken and pat it dry before baking. Once you remove the chicken from its package, rinse it under cool water in the sink (note: always sanitize your sink with disinfectant afterward). Next, pat the chicken dry with paper towels. Removing excess moisture will ensure you get extra crispy skin.   To reduce fat and calories, you can skin chicken legs.  Prepare all ingredients and preheat the oven to 400°F.   Spices: I like to use cumin, onion (grated) garlic (grated), paprika, celery powder, cayenne pepper and dried thyme if you have. Please make sure they are fresh! Spices are delicious, but a stale spice can easily ruin a dish. However, you are free to try different spice combinations.   The secret to making them crispy? Don't bake the chi...

One Day at a Time

One Day at a Time      Working out takes courage and self-motivation. It’s not always about losing weight — for me, it's about staying healthy, strong, and grateful that I can move. Whether it's Taekwondo or Zumba, my goal is the same: to stay active, to keep my energy flowing, and to enjoy the process — no stress, no pressure, just one day at a time. At my age, it may be harder to see quick results, but that doesn’t stop me. I focus on progress, not perfection. Some days, I don’t even want to leave the house — but that's when I give myself that little pep talk, reminding myself why I'm doing this. And once I start, no matter how tough the session gets, I’m always grateful I showed up. Because being able to move, stretch, kick, and dance is a blessing — health is true wealth. Every workout is a victory over excuses, a reminder that I am stronger than my doubts. Progress may be slow, but as they say, Rome wasn’t built in a day. Slowly but surely — I’m building s...
