Banana Oat Cake Recipe
A soft, moist banana cake made with oats, flour, yogurt, and just enough sweetness for breakfast, snacking, or dessert.
Serves: 6–8 Ingredients:
2 ripe bananas, mashed
1 cup oats
2 eggs
¼ cup plain yogurt
2 tbsp honey
¼ cup sugar
½ cup all-purpose flour
1 tsp baking powder
½ tsp cinnamon (optional)
¼ teaspoon nutmeg grated
Pinch of salt
2–3 tbsp milk, if needed
1 tsp vanilla extract
2 tbsp chopped walnuts or raisins
Banana slices for topping
Instructions:
Preheat the oven Preheat oven to 180°C (350°F).
Grease or line a small loaf pan or baking dish.
Mix the wet ingredients In a bowl, mash the bananas. Add eggs, yogurt, honey, and sugar. Mix until smooth.
Add the dry ingredients Stir in oats, flour, baking powder, nutmeg, cinnamon, and salt. Mix until combined. If the batter feels too thick, add 2–3 tablespoons milk.
Rest the batter Let the batter sit for 5 minutes so the oats can absorb some moisture.
Bake: Pour into the prepared pan. Add banana slices or nuts on top if using. Bake for 25–30 minutes.
Remove from the oven and top with banana slices and walnuts. Add honey to the toppings. Put back in the oven for 10 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
Cool and serve Let cool slightly before slicing.
Note: If you want it: less sweet: use 2 tbsp sugar more cake-like: use ⅓ cup sugar A good balanced version is: 2 tbsp honey + ¼ cup sugar
With flour → softer, fluffier, more cake-like Without flour → denser, more like baked oats For extra softness: Use ½ cup flour + ¼ cup milk This gives a bakery-style crumb while keeping moisture.
