Flavourful, Cheesy Broccoli, Sweet Corn Casserole Recipe. ππ
Ingredients: 1 cup sweet corn (drained)
2 cups broccoli, finely chopped
2 eggs, beaten
2/4 cup of all purpose flour
1/2 cup of whole milk
1/2 cup cream
1 onion grated
1 shallot sliced
1 garlic minced
ginger grated
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon thyme
1 teaspoon cumin
1/2 cup shredded Cheddar cheese (more if desired) or mozzarella cheese, I used emmental(swiss cheese)
Instructions:
Preheat the oven to 350ΒΊF and lightly grease baking dish/casserole.
Bring about 1 inch water to a boil in a pot. Place broccoli in a steamer basket over boiling water and steam until tender but still a bit firm, about 5 minutes.
Mash broccoli. Then add to a bowl.
Add corn, and mix well.
Season with cumin, thyme, ground black pepper, ginger, garlic, onion, shallot. Stir to combine.
Add egg, cheese, cream, milk and combine.
Spread evenly into the casserole. Sprinkle top with shredded cheese.
Bake in preheated oven for 35-40 minutes, or until the slice has set and the top is golden brown. Serve warm. Enjoy.
We served with lettuce, spinach, strawberry salad and baked chicken.
