This year, I skipped the accra (fish cakes) and floats, but I couldn’t resist my favourite: green banana and saltfish, or as we call it, green fig and saltfish. I prepared it with coconut oil and paired it with fried plantain, cucumber salad, avocado, tomatoes, boiled okra, and a cool glass of lemonade. That delicious Creole meal truly hit the spot — I felt like I was right back home in Saint Lucia!
