Cozy Dinner & Conversation | Simple Low-Carb Meal Idea Golden Oven Eggplant Bake Recipe: I also shared this recipe at @simplemealswithjess‬ 

 
A comforting Mediterranean-inspired dish featuring roasted eggplant filled with a savory beef and tomato mixture, topped with melted cheese and baked until golden. 
 
Serves: 4 
Ingredients: 
Eggplant • 2 medium eggplants 
• 2 tablespoons olive oil 
• Salt Beef Filling 
• 1 lb (450 g) ground beef 
• 1 onion, sliced 
• 2 shallots, sliced 
• 3 garlic cloves, minced 
• ½ red bell pepper, sliced 
• ½ green bell pepper, sliced 
• 2 tomatoes, chopped 
• 1 cup Bolognese sauce 
• ½ cup tomato sauce Seasonings 
• 1 teaspoon dried thyme 
• 1 teaspoon oregano 
• ½ teaspoon cumin 
• ½ teaspoon ground black pepper 
• ½ teaspoon paprika (optional) 
• ¼ teaspoon ground ginger 
• Salt to taste For Assembly 
• 2 cups grated cheese (Emmental, mozzarella, cheddar, or a combination) 
 • 1 egg, beaten 
• Extra black pepper 
 
Instructions: 
 
1. Prepare the Eggplant Preheat oven to 200°C (400°F). 
 
Slice the eggplants lengthwise into thick slices. Lightly sprinkle with salt and drizzle with olive oil. Bake for 20–25 minutes, until just tender. Remove from the oven and set aside. 
 
2. Prepare the Filling: In a large skillet, sauté the onion, shallots, garlic, and bell peppers until softened. Add the ground beef and cook until browned. Season with: 
 • Thyme 
• Oregano 
• Cumin 
• Ground ginger 
• Black pepper 
 • Salt. 
Add the chopped tomatoes. Pour in the Bolognese sauce and tomato sauce. Simmer for 8–10 minutes, stirring occasionally, until the sauce thickens. 
 
3. Assemble: Spread a thin layer of tomato or Bolognese sauce over the bottom of a greased baking dish. Arrange a layer of roasted eggplant slices. Sprinkle with a little grated cheese. Top generously with the beef mixture. Season lightly with extra black pepper. Add another layer of cheese. Drizzle or brush the beaten egg over the filling to help bind everything together. Cover each portion with another roasted eggplant slice. Top with more grated cheese and garnish with thin strips of red bell pepper. 
 
4. Bake: Bake for 15–20 minutes, or until the cheese is melted and lightly golden. Allow to rest for 5–10 minutes before serving.

 • A crisp green salad 
• Garlic bread 
• Rice • Roasted vegetables 
• Or enjoy it on its own for a hearty low-carb meal. 
 
Cooking Tips: 
• Salting the eggplant before roasting helps remove excess moisture and any bitterness. 
• A blend of mozzarella and Emmental creates a wonderfully creamy, golden topping. 
 • Fresh basil or parsley sprinkled over the finished dish adds freshness and color. 
 
Eggplant acts like a sponge and absorbs oil quickly. Roasting it before assembling the dish gives it a richer flavor while keeping it tender without becoming watery.
