Someone said Foodie?!!
Last night, I was in the mood for something different for dessert, so I got to experiment in the kitchen with oats and chia seeds. I prepared a delicious dessert and came up with five different names. Finally I choose this one. "ChiaYopDelight" Oh I am so loving this name! wink. Do you? Don't be shy, if you think it's not a catchy name, or does not compliment the dessert, it's Ok to say, I am not offended constructive criticism. Suggestions are welcome:)
No milk was added to this recipe.
Ingredients:
I used chia seeds, plain yogurt, nutmeg, dried cranberries.
RECIPE: (serves 4)
1 cup oatmeal
1/4 cup whole chia seeds
1/2 cup plain yogurt
4 tablespoons pure honey to taste
1/2 teaspoon nutmeg
Dried cranberry (or your desired dried fruit)
Directions:
Grate nutmeg. (you may add cinnamon if you desire)
In a bowl add half cup plain yogurt, grated nutmeg, 1/4 cup whole chia seeds and whisk.

Cover bowl and refrigerator for half and hour.
In the meantime:
Prepare your favorite oatmeal as usual.
Cook oats about 25 minutes over medium heat, stirring occasionally to give you a smooth creamy porridge. Before taking it off the heat, add 1 table spoon chia seeds for a little extra nutrition and satiety, then give it a stir.
Place it in a bowl, cover and let sit for 10 minutes to allow chia and oats to absorb liquids. Stir in the dried cranberry. (or any of your choice) I used cranberry.
Remove mixture from the refrigerator. To the bottom of your bowl or dessert cup, add some of the refrigerated mixture, layer with some cooked oatmeal, stir slightly, add more cooked oatmeal and the mixture from refrigerator to the top. Add toppings and honey as desired.

A memory never forgotten. Dont know if it was the food the energy or the people whom i met...Ah i know...IT WAS ALL OF THAT.
