Homemade Tasty Cucumber Bites with Eggs and Seasoning.



With Easter approaching, I am thinking a lot about appetizers!
 I absolutely love cucumbers, they are so fresh, crispy and refreshing. Hence the reason I try to find many ways to prepare them.

Last weekend I prepared stuffed cucumber bites, using eggs, herbs, seasoning from my garden. It was tasty, so easy to prepare and delicious; perfect for parties, they make great bite sized appetizers, a tasty addition to a picnic or packed lunch too, and they look fancy. You will enjoy absolutely!

It will look like you spent a lot of time preparing this, but it is really simple. Your guests will be quite pleased with these at your next gathering. Make sure you have about 2-3 per guest because its addictive.

  •  Yield 4 servings

Ingredients:

2 medium cucumbers
2 boiled eggs
2 tablespoons mayonnaise


1 tablespoon fresh parsley, minced
1 onion (chopped)

2 cloves garlic (minced)

1/2 teaspoon thyme

4 seasoning peppers, (minced)

Two tomatoes (diced)

1 tbsp lemon juice

A pinch of salt and ground pepper

2 tablespoons coconut oil


Directions:
  1. First, wash cucumbers, tomatoes, seasoning, herbs.
  2. Put the eggs gently into cold water and boil for seven minutes.The water should cover the tops of the eggs. Add a couple of pinches of salt to the water as this will stop the eggs from cracking in the hot water. After, pour out the hot water and add the cooked eggs to a bowl of cold water. Remove the shells from the eggs. 
  3. Mash the boiled eggs with a fork. Place aside in a bowl.
  4. Add coconut oil to skillet, over medium heat, sauté onions, garlic, peppers, parsley, thyme. (seasoning as you desire)
  5. Using a peeler, create stripes on the outside of the cucumber by peeling along length of cucumber, leaving every other section intact. Cut off ends of cucumber and slice into 1-inch rounds. Using a melon baller, scoop out the seeds and inner flesh from the top 2/3's of each cucumber slice. 
  6. Season the cucumber slices with salt, pepper and lemon juice. This also helps to draw out the excess water and firms up the cucumber a bit.
  7.  In a bowl, mix all stuffing ingredients.The mashed eggs, mayonnaise, tomatoes, the sauteed onions, peppers, parsley, thyme, garlic. A dash of salt and pepper. You may add chicken or fish to your mixture (optional)
  8. Fill cucumber cups with the mixture.
  9. Garnish with chili powder or paprika (optional)
