Banana cake recipe. 

Ingredients: 

2 cups all purpose flour 

2 eggs beaten 

140g butter softened, plus extra for the loaf pan 

1 teaspoon baking powder 

1teaspoon baking soda 

3 ripe bananas mashed 

1/2 teaspoon cinnamon 

1 teaspoon vanilla extract 

1/2 cup white sugar. 

1/2 teaspoon salt 

160 ml milk or 10 tablespoons 

Honey 

Sliced bananas about 10 slices 

Food colouring 

Instructions: 

Preheat oven to 180C or 350 degrees F 

Grease the loaf pan with butter (or line with baking paper). 

Add the sifted flour to a bowl, whisk in the baking powder, baking soda, cinnamon, and salt. Set aside. 

Cut a banana into some slices, add, a colouring of your choice; I used red on a few slices, yellow on another set and some without colouring as well. Set aside. 

Break the eggs into a mixing bowl. Add the melted butter, sugar, vanilla extract and mix. 

Then add mashed bananas and whisk until combined. 

Add dry ingredients that was set aside. 

Add milk, and mix on low, but do not overmix. A few lumps in the batter is okay. Pour into the prepared loaf pan, smoothing out with the back of the spoon. 

Bake for 40 minutes, then remove from the oven and add the banana slices that were set aside. 

Add honey to each banana slice. 

Put back in the oven and bake for about 15 - 20 mins until it is golden on top and a knife or skewer comes out clean. 

Baking times vary, so keep an eye on yours. 

Remove the cake from the oven and set on a wire rack. Allow to cool completely for about 10 -15 minutes and then turn out carefully. Enjoy
