One Pot Chicken & Vegetable Bake Recipe.
A comforting, saucy oven-baked meal made from simple, everyday ingredients.
This rustic one-pot dish is all about layering flavor with what you have on hand. Tender seasoned chicken is baked with fresh vegetables, herbs, and melted cheese in a light, savory sauce. It’s wholesome, flexible, and perfect for a cozy meal.
Serves: 3–4
Ingredients:
Base
2 chicken breasts, ( cut into chunks) seasoned
1 tbsp oil (optional)
Vegetables
1 carrot, sliced
1 zucchini, sliced
1 cup cabbage, chopped
1–2 tomatoes, chopped
½ green bell pepper, sliced
1 small onion, sliced
1 shallot, sliced
2 cloves garlic, minced
1–2 scallions (green onions), chopped
Seasoning
1 tsp green seasoning (Caribbean herb blend)
½ tsp dried thyme
½ tsp oregano
½ tsp cumin
½ tsp ground black pepper
Salt, to taste
1 bouillon cube
Other
1–1½ cups water or light chicken stock
1–1½ cups grated cheese
Instructions:
1. Preheat
Preheat oven to 180°C / 350°F.
Lightly grease a baking dish.
2. Build the Base
Add chicken to the dish, then layer in:
Onion, garlic, shallot, scallions
Green seasoning
Gently mix to coat the chicken.
3. Layer the Vegetables
Add vegetables in layers:
Carrots
Zucchini
A handful of cheese
Bell peppers
Cabbage
Tomatoes
Top with the remaining cheese.
4. Season & Add Liquid
Sprinkle thyme, oregano, cumin, black pepper, and salt evenly over the dish.
Pour in enough water or stock to come about halfway up the ingredients; this creates the signature light sauce.
5. Bake
Cover loosely with foil and bake for 30 minutes.
Remove foil and continue baking for 15–20 minutes, until:
Chicken is cooked through
Vegetables are tender
Cheese is melted and lightly golden
Sauce is flavorful and slightly reduced
6. Serve
Let rest for a few minutes, then serve warm with the natural sauce spooned over.
Note:
This dish sits between a casserole and a stew; not dry, not overly thick, but perfectly saucy and comforting.
Optional Additions:
Potatoes or sweet potatoes for a heartier meal
A splash of cream for richness.
