 Garlic Lemon Chicken Bake with Potatoes, Mushrooms & Cherry Tomatoes Tender chicken and baby potatoes baked in a rich garlic lemon butter sauce with mushrooms, herbs, and juicy roasted cherry tomatoes. Finished with fresh chives, this comforting one-pan meal is simple, flavorful, and perfect for any day of the week. 

 Serves: 2–3 

Prep Time: 15 minutes 

Cook Time: 40–50 minutes 

Ingredients:

 2 boneless skinless chicken breasts 

10 oz baby potatoes, halved 

1 cup mushrooms, sliced 

1 cup cherry tomatoes 

4 tbsp butter, melted 

1 tbsp olive oil 

3 cloves garlic, minced 

2 tbsp fresh lemon juice 

1 tbsp parsley 

½ tsp paprika 

½ tsp cumin 

Salt and freshly ground black pepper, to taste 

Fresh chives, chopped (for finishing) 

Instructions 1. 

Preheat the oven Preheat oven to 400°F (200°C). 

2. Sear the chicken Heat olive oil in a large ovenproof skillet over medium heat. Season chicken breasts with salt and black pepper. Sear chicken for about 2 minutes per side, until lightly golden. Remove briefly from heat. 

3. Prepare the pan Arrange chicken on one side of the skillet. Add: Baby potatoes Mushrooms around the chicken. 

4. Make the garlic lemon butter In a small bowl, combine: Melted butter Garlic Lemon juice Parsley Paprika Cumin Mix well. 

5. Bake Brush most of the garlic butter mixture over the chicken, potatoes, and mushrooms. 

Transfer skillet to the oven and bake for 25–35 minutes, until: Chicken is cooked through Potatoes are tender 

6. Add tomatoes & finish Remove skillet from oven. Add cherry tomatoes and sprinkle with fresh chives. Return to oven for an additional 10–15 minutes, until tomatoes soften slightly and begin to blister. 

7. Serve Spoon the garlic lemon sauce over everything before serving. 

Cooking Tip Adding the cherry tomatoes toward the end keeps them juicy and fresh instead of overly collapsed.
